Why EXTRA crispy?
In my opinion the best crackers are the ones with the best snap – they’re super thin, loaded with flavor, and have the right amount of crunch. But don’t get extra crispy confused with burnt. We’re aiming for a light, delicate crackers in this recipe. So enjoy the tangy sourdough flavor with just the right amount of crunch! How to make them crispy
To make these crackers extra crispy you’ll want to make sure your sourdough batter is spread thin. A thin layer makes it quicker for moisture to escape and creates that desirable snappy texture. Avoid spreading too thin though as this can cause your crackers to burn quickly and become too brittle.

Ingredients you will need to start
- 3tbsp Unsalted butter (or unsalted cultured butter)
- 3g salt
- 200g sourdough discard
How to make extra crispy sourdough discard crackers
This recipe is super simple and you’ll need 200g of sourdough discard to start. Discard is preferred in this recipe as we do not need the leavening capability of freshly fed starter.
You will need to combine your starter with 3tbsp of melted butter and 3g of salt in a medium mixing bowl. Give this mixture a generous whisk to fully incorporate the ingredients.
Setting the bowl off to the side, preheat the oven to 350F and line a large baking sheet (I used a 19 x 12 in sheet) with aluminum foil or parchment paper.
Grab you sourdough discard mixture and pour it onto the lined baking sheet. Spread the dough out thin and even. If using a 19 x 12 baking sheet, it should cover the whole surface.

Add a pinch of salt to top off the batter along with any additional spices you would like to add.
Place the baking sheet into the oven for 8-10 mins. Remove the sheet and cut your batter into your desired cracker shape.
At this point the dough should be soft enough to slice, but firm enough to hold shape. Place your crackers back into the oven for 15-20 min.
Once finished, remove the baking sheet from the oven and allow to cool for 10 min. You can now snap apart your crackers and enjoy! Pair with some dip or share them in your next spread!
Extra Crispy Sourdough Discard Crackers

Ingredients
200g sourdough discard
3g salt
3 tbsp of melted unsalted butter
(Optional) Everything bagel seasoning, rosemary and garlic powder, or seasonings of your choice
- Materials
19 x 12 baking sheet
parchment paper or aluminum foil
medium sized mixing bowl
whisk
silicone spatula
Directions
Line your baking sheet with aluminum foil or parchment paper and preheat your oven to 350F.
In a medium sized mixing bowl add your melted butter, sourdough discard, and salt, and give it a generous whisk.
Once thoroughly mixed, pour the batter mixture onto the lined baking sheet and spread the dough out thin with a spatula. Make sure the dough is even across the whole sheet. If you can see lining through the batter it is too thin and you will need to fill in the gaps.
(optional) Sprinkle some spices or seasoning of your choice and a pinch of salt. I like to use everything bagel seasoning or rosemary and garlic powder.
Place your baking sheet in the oven and bake for 8-10 mins.
Remove your baking sheet from the oven and score the batter to your desired cracker shapes. At this point the crackers should still be soft enough to cut through easily, and firm enough to hold their shape.
After slicing your batter return the crackers to the oven and bake for 15-20 mins.
Once fully baked remove your crackers from the oven and allow to cool for 10 min. Once cool you can snap your crackers apart along the scoring line and enjoy!
To save them just place them in an air tight container and store on the counter for 3-4 days. For best results serve them on the same day!
